Two meals– one bleh and one yummy

After my friends suggested I photograph my meals I have been cooking each day, I have been trying hard to remember to bring my camera into the kitchen after I cook the food to photograph to show everyone. Not sure why you’d want to even see it, but oh well. Maybe it’ll help someone who is like me (scared of more then 5 ingredients, lazy at cooking etc) be more excited to try to cook 🙂

Before I get into the meals I should mention that in 2 days I managed to burn something in both my oven AND toaster oven. Yes! When I made veggie pot pie I over filled the pie dish and it all flowed over and burned on the bottom of the oven and I forgot to clean it. Then when I warmed the oven for the item below my house FILLED with smoke and it smelled HORRIBLE! Then today I made grilled cheese and that dripped on the bottom of the toaster oven and the next time I turned the toaster oven on it made SUCH a burning smell. Awesome, huh? ya… fun. ANYWAY….

Meal A–“Bleh”

So in the veggie cookbook I listed in the previous post (Skinny Bitch)–there was a recipe for Potato Samoas. Now I don’t like cookbooks without pictures because I like to kinda see what the item should look like. So for some reason, I felt samoas were like veggie calzones for some reason.. or like a veggie hot pocket. It was pretty easy to make… I cheated because of time and used Trader Joes pizza dough (a must to keep on hand!) and all you do is cook & mash up some red potatoes then mix with some broth, curry, cumin, cinnamon and nutmeg and some other little things and then you fold it into the dough… I guess I folded it completely wrong too… oops! Anyway… as I was wrapping them I said to myself “these don’t look like a hot pocket….” Once it came out of the oven and I dug into it I wasn’t happy. It was more like Indian food which isn’t what I was hoping for. So, I didn’t feel like eating it and popped some Trader Joes tater tots in the toaster oven and had those for dinner. Fail.

Meal B–Yummy.. Southwest Tuna Burgers

My mom had given me a cookbook from Costco.. I guess they put a free one out to their customers each year… some really good stuff in there! Anyway I decided to make the Southwest Tuna Burgers and they were SO good! Super easy too. I mixed in a bowl 2 cans of tuna, 2 eggs, some crushed tortilla chips, some lemon juice, some fresh cilantro & chopped red bell pepper… form into patties and pan fry… SO good and EASY! It says to top with salsa and lettuce but I couldn’t open the salsa jar (such a girl) so I just put some mayo and avocado and a side of tater tots. I highly suggest this 🙂
